    Adaa at the Taj Falaknuma Palace was recently included in the world's top 100 restaurants, according to the fourth annual poll of readers by private jet lifestyle publication Elite Traveler. This is the first time an Indian restaurant has made it into the ratings. Excerpts from a quick chat with the man behind the food, executive chef Arun Sundararaj:

    How does it feel to be one of the 17 new entries on the Elite Traveler list?

    It feels wonderful. To be on a list which puts us along with the world's best, gives me a great sense of pride and honour. We were informed through an email and my first reaction was simply "Yippee". It took a while to sink in.

    Have you eaten at the other restaurants in the Top 100?

    Yes, I have visited a few. But I have put many on my to-do list.

    What does it take, in your opinion, to be a top restaurant?

    To be a top restaurant, we need to consistently give the guests a fantastic experience. From the booking to the farewell, everything needs to be flawless. Food is the most important part of the experience, so to create fantastic food, we use the best ingredients available and techniques that would enhance the final dish; no shortcuts. The service needs to be guestcentric and again, delivered flawlessly.

    What inspires you in the kitchen?

    Ingredients inspire me. A simple aroma or a new ingredient, ignites a spark in me that opens up my mind to answer questions like, "What can I do with this? Where can I use it? What would go best with this?" The list is endless. These questions put me on a path or a quest to innovate.
