Georges Blanc Executive Chef Olivier Chardigny loves to plan ahead. Even on a flight, the Chardigny is making a blueprint for the upcoming tasks. However, the executive chef does not forget to take a break from work and give his body some rest. Here's what he does up in the air.

“I am generally planning for a service ahead with allocation of duties and responsibilities. When you plan ahead, your execution becomes very easy. I check recipes and I organise the day or week ahead. I also try and catch up on some sleep as well.”
